Wow it’s been a long sunday baking it up in the kitchen!
I first tried this lovely carrot cake at a friend’s place. It was soooo very moist and ridiculously easy to make. Even grating the 10 or so carrots wasn’t so bad when you have friends about. :] I asked for the recipe and have been waiting to create the carrot cake once more. Cue in Sunday baking and inviting E’s family over for after dinner cake and decadent hot chocolate :]
What better way to spend your days than eating cake once, twice or three times a week!
This scrumptious yumminess of a cake is a belated birthday cake for yours truly. Last year I had the same cake made for my birthday by my SO.
The main ingredients for the cake are hazelnut, eggs, sugar and butter. Lots of butter and looots of eggs… 7 to be exact 🙂 With good sharp equipment, this cake was quickly and easily prepared from turning the hazelnuts into hazelnut meal, whipping up air in the eggs to folding the dry into the wet for baking.
Look at it~ so yummy. It’s great with a cup of tea and good company 🙂

Since it’s summer, flowers and plants are in full bloom. The rhubarb plant was ripe for the picking and we had such a large bowl of leftover strawberries just begging to be exploited and made into something great… Rhubarb and strawberry pie it is!
The recipe comes from an old norwegian cookbook, is it pretty much the third time we have made it. The first two times were made last summer, a rhubarb pie and also a rhubarb and wild blueberry pie. The wild blue berries were scavenged around the hill the house sits upon, it was fun but i also fell in a bush and that scared the living day lights out of me… But i guess it paid off in pie! Both were very delicious but the crusts were a little bit fail… too dry.
This time it was pretty spot on, with a nice crumbly crust, yummy filling and lots of ice cream on the side.

Bergen again 🙂
This is the third time I’ve been to Bergen and every time I’ve headed into bergen it was some sort of festive time, be it birthday celebrations, Christmas and new years or in this current case 30th year marriage anniversary!
First off, at Oslo arrivals, I had to wait for a particular Mr Wold to land his ass (Istanbul to Oslo). The plane was highly delayed but good thing I had magazines on my iPad as well as a nice custard pastry to keep me company. By the time he arrived, we only had 2 hours left til the Oslo to Bergen flight departs. We got ourselves checked-in; bought a sandwich and an Oreo ice cream; got comfy on some airport chairs and; lazed. Once landed, Bergen side was breezy since we just grabbed our luggage and hopped on a taxi towards fooooood 🙂
Annnnnnd cake! Can’t forget the cakes, a 3 layered sponge cake with vanilla filling decorated with piped whipped cream on the outside and topped with lots and lots of yummy norwegian strawberries bought from a place 5-7 hours drive east. The cake tasted lightly sweet, refreshing from the strawberries, soft and moist. The second cake was made by their daughter, a 2 layered sponge with cream filling, shaped into a heart, decorated with smooth marshmallow fondant topped with little silver sugar pearls and a wedding topper.
However… I forgot to take photos of them yumminess… I was too tired . It was such a long day and due to the midnight sun… eyes are deceived and confused as to the time to head to bed!
